1Mixed well the olive oil, garlic minced, ginger minced, lemon zest in a small bowl , cut the French baguette into 24 slices , place into a non-stick cooking sheet and brushed the olive oil mix in each slice of French Baguette. Place the large shrimp in the reaming oil (about 2 Tbs.) and coated them. In a non-stick skillet in med heat place the large shrimp and sauté one side and turn them over when it shows a little curl up and pinkish and add in the sliced red onions. Then add in 1 Tbs of water and will steam shrimp. Take the shrimp out after 2 minutes and put, and then add in the 1/4 cup of spinach chopped in chiffornade. Let it cook for a min or two and add in the 2 tsp of Feta cheese to the mixed. Meanwhile cut shrimp in cubes enough size to topped crostini slices. Place the chopped shrimp back in the skillet and mix all the ingredients together in very low heat for about 1 min and turn off the heat, remove skillet and start assemble them with a teaspoon place mixed on the top of each sliced baguette already season with oil mixture and put it on the broiler for about a minute just enough for the baguette to be browned on the side. Serve warmed.
