cupWheat flour, white, all-purpose, enriched, bleached

cuppumpkin (1 15oz. can)

container (8 oz)non-fat plain yogurt

cupsplenda no-calorie sweetener

cupegg beaters
1/2
cup, packedraisins, seedless

tablespoonflax seeds, ground

medium (2-3/4" dia) (approx 3 per lb)apples, with skin

tablespoonsraw sugar

tablespoonspumpkin seeds (roast 10 minutes in oven for more crunch)
Steps
Sequence Step
1Mix flours, baking powder, baking soda and salt together in a bowl with a fork. Set aside.
2Mix together in a large bowl the entire can of pumpkin puree, yogurt, egg beaters, and splenda.
3Add dry to wet. Mix until just combined. Add in diced apple, flax seed and raisins.
4Divide evenly in muffin tins to make 24. Top evenly with pumpkin seeds and raw sugar.
5Bake in 350 degree oven for 25 to 35 minutes or until toothpick inserted in the center comes out clean. Cool on rack 5 minutes. Remove from pan and cool completely.
