Ingredients

1/2	small	Onion, chopped
1/4	medium (approx 2-3/4" long, 2-1/2" dia)	green pepper, finely chopped
3	clove	garlic minced
2	tablespoons	olive oil, extra virgin
1	package (10 oz)	Spinach, chopped, slightly packed
8	ounces	Cheese, mozzarella shredded
4	Usda default (100 gm - 4 oz)	1# Ground beef, browned ...pour off most of the fat
2	cups	Pasta Sauce, organic, Muir Glen
1	can	Tomatoes, red, ripe, diced
8	noodles	lasagna noodles, whole wheat
2	ounces	Cheese, parmesan, shredded

Steps

Sequence	Step

1	brown beef in large skillet, drain fat and set aside
2	saute onion pepper and garlic in olive oil in large suace pan
3	add spinach to sauce pan in 2 batches to wilt then suate in veggies for 3 mins
4	add spinach mix to beef in skillet and top with marinara and tomatoes
5	prep 8x8 glass bake dish with cooking spray and layer starting with sauce cheese then noodles. end with cheese and top with parmesan
6	bake in 350 degree oven for 30 minutes covere din alum foil then 20 min uncovered
