Steps
Sequence Step
1Brown ground turkey adding cumin, salt and pepper to taste, if you wish.
2Combine 1 4 oz can of chopped green chiles, drained, with 4 laughing cow light swiss or herb cheese wedges.
3Add beans and cheese mixture to turkey. Stir to combine and remove from heat.
4Saute cabbage until tender.
5Coat a 9 x 13 inch baking pan with oil spray. Lay out a tortilla. Put 1/6 of cabbage in center and 1/6 of turkey mixture on top. Repeat with remain tortillas and lay them, seam side down, in prepared pan.
6Heat oven to 375.
7Cover Enchiladas with one 10 oz can of red or green enchilada sauce. Sprinkle with cheddar cheese and bake for 30 minutes or until lightly browned and heated through.
