Ingredients

pound, rawchicken breast, cut into strips 1 x 3 inches
1
head (5" dia)Lettuce, butterhead (includes boston and bibb types), raw
1
smallPeppers, sweet, red, orange, and yello raw, sliced
1
smallred onion, sliced very thinly
1
tablespoonolive oil, extra virgin
1
small whole (2-2/5" dia)Tomatoes, sliced
1
dashsalt, to taste

dashpepper, to taste
Steps
Sequence Step
1Take the leaves off the lettuce at the core so you are left with big leaves. Wash, then pat dry with a paper towel and set aside.
2Slice the tomato, peppers, and onion into thin slices or julienne strips. Set these aside as well.
3Heat a nonstick pan over medium heat, while heating salt and pepper both sides of chicken strips, when pan is hot add olive oil then add the chicken. Cook chicken for 3-5 minutes per side and when done set on paper towels to rest for a few minutes.
4Place a lettuce leaf on a plate, then add chicken, vegetables, a little salt and pepper, and a drizzel of extra virgin olive oil, about 1 teaspoon. Wrap lettuce around chicken and veggies and eat! Serves 4-5 people.
