| 1 | Preheat oven to 450 degrees | 2 | In a small saucepan, combine 1 cup of the splenda, the cranberries and 1 tablespoon of water; cook and stir until a liquid forms. Bring to a boil; cook, stirring constantly, until cranberries begin to pop, about 10 minutes. Set aside to cool, slightly | 3 | On a lightly floured surface unfold pastry. Using a rolling pin, roll pastry into a 12 inch circle. Place in a 9-insh pie plate letting excess pastry drape over edge of plate; set aside. | 4 | Peel the apples (I used granny smith, braeburn, and fuji), core and very thinnly slice the apples | 5 | In a bowl toss together apples, flour, cinnamon, nutmeg, salt and remaining spelenda; stir in reserved cranberries. spoon into reserved pastry; fold dough around filling letting folds form naturally. | 6 | Whisk together the walnuts (or pistachios), flour, oats, baking powder, and 1/4 teaspoon salt in a medium bowl: set aside. | 7 | Put butter, brown sugar and 1/4 cup spenda in the bowl of an electric mixer fitted with the paddle attachment; mix on medium speed until creamy. | 8 | Stir walnut mixture into butter mixture until just combined. Work mixture through your fingers until is forms coarse crumbs ranging in size from small peas to gum balls; set topping aside | 9 | Sprinkle the topping evenly over the pie. | 10 | Bake for 15 minutes at 450 degrees; reduce heat to 350 degrees. Bake until crust is golden and filling is bubbling, about 35 minutes (cover pastry with foil if it starts to overbrown). | 11 | Place on wire rack to cool |
