Sharon's super lo-cal spiced apple cranberry pie
Ingredients
Amt. Measure Ingredient
1
1/4
cupssplenda no-calorie sweetener, granulated
1/2
cup, wholecranberries (fresh)
5
medium (2-3/4" dia) (approx 3 per lb)apple, Granny Smith, peeled, thinly sliced
1/4
cupall-purpose flour, unbleached
2
teaspoonscinnamon, ground
1/2
teaspoonnutmeg freshly grated
1/4
teaspoonsalt
Steps
Sequence Step
1Preheat oven to 450 degrees
2In a small saucepan, combine 1 cup of the splenda, the cranberries and 1 tablespoon of water; cook and stir until a liquid forms. Bring to a boil; cook, stirring constantly, until cranberries begin to pop, about 10 minutes. Set aside to cool, slightly
3On a lightly floured surface unfold pastry. Using a rolling pin, roll pastry into a 12 inch circle. Place in a 9-insh pie plate letting excess pastry drape over edge of plate; set aside.
4Peel the apples (I used granny smith, braeburn, and fuji), core and very thinnly slice the apples
5In a bowl toss together apples, flour, cinnamon, nutmeg, salt and remaining spelenda; stir in reserved cranberries. spoon into reserved pastry; fold dough around filling letting folds form naturally.
6Whisk together the walnuts (or pistachios), flour, oats, baking powder, and 1/4 teaspoon salt in a medium bowl: set aside.
7Put butter, brown sugar and 1/4 cup spenda in the bowl of an electric mixer fitted with the paddle attachment; mix on medium speed until creamy.
8Stir walnut mixture into butter mixture until just combined. Work mixture through your fingers until is forms coarse crumbs ranging in size from small peas to gum balls; set topping aside
9Sprinkle the topping evenly over the pie.
10Bake for 15 minutes at 450 degrees; reduce heat to 350 degrees. Bake until crust is golden and filling is bubbling, about 35 minutes (cover pastry with foil if it starts to overbrown).
11Place on wire rack to cool
