1 | Preheat oven to 350 degrees. Coat 8-inch square baking pan with nonstick spray. Combine flour, oats and sugar in medium bowl. |
2 | Using a pastry blender, add butter and blend until mixture is crumbly. |
3 | Press crumbs into the bottom of pan. Bake for 10 minutes until edges are golden brown. |
4 | Meanwhile, whisk egg and egg white. Add sugar and beat until creamy. Add flour, baking powder, salt and lemon juice; whisk until smooth. |
5 | Pour lemon mixture over pre-baked base. Bake for 20-25 min. or until center is set. |
6 | Cool in pan for 15 min., then transfer to wire rack to cool completely. Makes 16 squares. |
