Steps
Sequence Step
1Whisk dry ingredients in a large bowl. Whisk wet ingredients, except blueberries, in a medium bowl. Add wet ingredients to dry and combine with a whisk. Allow to stand for 5 minutes. Fold in blueberries.
2Heavily spray 2 12 count muffin tins with non stick cooking spray.
3Fill muffin cups 3/4 full and if desired, top with granola or chopped nuts.
4Bake at 350 for 20-25 minutes, until pick comes out clean.
5Cool in pans. Loosen edges with a knife and gently remove from pans.
6Keeps for a week in the fridge, 3 months in the freezer.
