Recipe Description I can't remember where I discovered this recipe, but I decided to make if for the first time tonight. Because I count calories to maintain my weight, I changed it just a but. Really good!!

tortillas (approx 7-8" dia)Tortillas, Carb healthy

Usda default (100 gm - 4 oz)Sour cream, fat free--1 cup

package (10 oz)Spinach, frozen, chopped, thawed and well drained
Steps
Sequence Step
1Brown meat with onion in large skillet over medium-high heat; drain. Reduce heat to medium and add salsa, enchilada sauce, dressing and taco seasoning; mix well.
2Arrange 3 tortilla in a single layer on bottom of baking dish that has been lightly sprayed with non-stick cooking spray. Cover with layers of half each of the meat mixture, sour cream and cheese. Sprinkle with spinach. Cover with remaining tortillas and repeat layers of remaining meat mixture, sour cream and cheese.
3Cover with foil and bake, covered, in a 400-degree oven for 30-45 minutes. Remove cover and bake an additional 5-10 minutes until cheese is melted. Let stand for 5-minutes before cutting to serve.
