Steps
Sequence Step
1soak soy beans for 8 Hours in lukewarm water
2optional - rinse the excess soaking water off of the soybeans and add the same amount of clear unused water back to the soybeans and put in a largish pot or saute pan. (Rinsing reduces gas)
3Boil soybeans for 5 minutes covered on high heat or until they boil over
4boil soybeans on high heat uncovered for another 5 minutes or until 80% of the water is gone
5add soy sauce, sugar, garlic, and oil and mix well change to low heat and cover let simmer for 30 minutes
6uncover and reduce the sauce on high heat until the soybeans are heavily coated by a syrupy (sticky and shiny) sauce.
7allow to cool and place in a container for the refrigerator. Serve well chilled.
