cupMilled Flaxseed

cupsour cream

eggseggs, slightly beaten

cupsblueberries, fresh or frozen (do not unthaw)

teaspooncinnamon, optional for garnish

Steps
Sequence Step
1Mix orange juice,zest
2In a separate bowl mix dry ingredients together: flour,flax seed, baking powder, salt, baking soda, brown sugar, white sugar.
3Make a well in the center of the dry ingredients and add oatmeal mixture, sour cream, oil and eggs.
4Stir only until ingredients are moistened.
5Carefully fold in berries.
6Spoon batter into greased muffin tins, filling about 3/4 full.
7Combine sugar and cinnamon and sprinkle over muffins.
8Bake at 400 degrees F for 15-20 minutes or until muffins test done.
9Remove from tins and serve warm, if desired. Great to save for breakfast or freeze for a healthy snack.
