cupsquinoa, organic, rinsed well and cooked

tablespoonolive oil

tablespoonButter, light, Land o lakes

medium (2-1/2" dia)Onion, chopped

clovesgarlic, chopped

teaspooncayenne pepper

cupschicken broth, organic free range, Pacific

fliud ounceswhite wine

packages (10 oz)Spinach

ouncesgoat cheese, firm, crumbled

cupgrated parmesan

tablespoonsparsley, chopped
Steps
Sequence Step
1Heat butter and olive oil over medium heat. Add inion and saute until tender. Add garlic and cook for one minute.
2Add quinoa , wine and cayenne pepper. Cook until wine is almost evaporated, stirring frequently.
3Add enough broth to cover quinoa. Simmer uncovered over medium low heat.
4Add broth as liquid is absorbed and stir frequently. Cooking quinoa should take about 15 minutes.
5Stir in spinach in last 2 minutes of cooking.
6Remove from heat , add salt and pepper to taste. Stir in goat cheese, parsely and parmesean cheese.
