cups (8 fl oz)water, warm (100 degrees or less)

Sequence Step
1In a large bowl, stir together 10oz bread flour, yeast, and sugar. Make a well, add oil and water. Stir until incorporated. Stir in 1 cup at a time of wheat flour and then bread flour until dough is soft and slightly sticky.
2Turn dough out onto lightly floured surface and knead for 6 - 7 minutes. Place mixing bowl over dough and let rest for 20 minutes.
3Remove bowl, flatten out dough and sprinkle about half of the salt over it. Begin kneading the salt into the dough. After a few turns, sprinkle the rest of the salt and continue to knead for 5 - 7 minutes or until dough is soft and smooth.
4Grease two loaf pans.
5Split dough in half and shape each halve into a loaf. Place into loaf pans and cover with damp towel.
6Let rise until 2 inches above rim of loaf pan.
7Place loaf pans into 375 degree oven for 35 minutes. If bottom of loaf sounds hollow when thumped, it is done. Or check using a thermometer (200 degrees, internal temperature).
