| 1 | 1. Preheat oven to 350 degrees.
2. In a food processor, cream the tofu, honey, oil, vanilla extract, egg, and banana together.
3. In a bowl, combine the flour, baking soda, baking powder, and wheat flax.
4. Add to food processor along with the salt until creamy.
5. Pour into lightly sprayed mini baking trays. (Suggestion: use spray butter)
6. Baked for 30 to 35 minutes, or until a toothpick is inserted and comes out clean.
7. Cool on a wire rack for 30 minutes.
Yields: 1 Loaf of Banana Bread
