Recipe Description My maily and I love pumpkin cookies and I was curoous about the nutrition facts. We use whole wheat flour instead of white flour and actually prefer the taste with whole wheat flour. They are richer and heartier that way. When we make the batch we plit it in half and add chocolate chips to half the recipe and leave the other half plain.

1In a large bowl mix the brown sugar, butter, vanilla and your 1 large egg.
2Now add in all your spices. Salt, cloves, nutmeg and cinnamon. Also pour in your baking soda and baking powder at this time as well. Mix for a few minutes to ensure none of the spices are clumped.
3Now add in your flour. You''ll have to beat in the flour for a few minutes as well. Soon after you start it will thicken quite a bit and get harder to blend together. Just turn up your blender to a higher speed and continue until the whole mixture is evenly colored.
4Now you''re ready to either add in some nuts or chocolate chips. Both optional, depending on you. Use a large spoon to scoop up the dough and plop it on a cookie sheet. Evenly space you cookies so that there is about one centimeter between each cookie.
5Bake for 15-18 minutes at 350 degrees F.
