cupPinto beans, soaked, rinsed, cooked

medium whole (2-3/5" dia)Tomatoes chopped

cup, choppedOnion, chopped

tablespoonsgreen onions, organic, diced

tablespoonbasil, fresh, chopped

tablespoonparsley, fresh, chopped

teaspoonBlack Pepper, Coarsely Ground
Steps
Sequence Step
1Place quinoa in pot with vegetable stock, bring to a simmer, then lower heat to lowest setting
2Cover and cook for 15 minutes until tender, stirring occasionally
3Meanwhile heat olive oil in a saute pan over medium heat
4Add onions and garlic to pan, saute until onion become translucent
5Fluff quinoa with a fork
6Add all ingredients to quinoa
7Serve
