tablespoonsFlaxseed oil

slices (3-1/2" dia x 3/4" thick)pineapple, organic, core removed

tablespoonscoconut oil, extra virgin, melted
Steps

1Drizzle chicken breasts with flaxseed oil, then season each piece all over.. skin, bones and all
2Allow chicken to come to room temperature while grill is heating up
3meanwhile, prepare whole slices of fresh pineapple, then drizzle each piece with coconut oil
4Place chicken, skin side down, on hot grill for approximately 4 minutes, then turn 90 degrees, but leave on the same side
5Cook chicken about 3-4 more minutes on the same side before flipping. Chicken skin should be charred and crispy. Allow to cook on bone side for 5 more minutes until the chicken reaches 140 degrees in the middle of the thicken part of the breast
6On a separate part of the grill, place the pineapple slices. Cook 2 minutes then rotate 90 degrees for 2 more minutes. Then flip and repeat, careful not to burn these, just some nice grill marks and carmelization.
7Allow chicken to rest for 5 minutes before serving, this keeps the juiciness intact. Serve with pineapple
