1 | Boil chicken for 20 minutes. |
2 | Thaw broccoli. Drain and pat dry. |
3 | Cover bottom of casserole dishes, 2 11X7 dishes or 1 13X9 dish, with broccoli. |
4 | In a small bowl, combine mayonnaise, soup, broth (I use the liquid from cooking the chicken if I have it; instead of buying broth) and lemon juice. Set aside. |
5 | Debone and shred cooked chicken. |
6 | Place chicken on top of broccoli in casserole dish. |
7 | Pore mayonnaise mixture over chicken and broccoli. |
8 | Melt butter in sauce pan and saute bread crumbs until well toasted. |
9 | Sprinkle toasted bread crumbs over casserole dish. |
10 | Sprinkle cheese over casserole dish. |
11 | Bake for 30 minutes at 350 degrees. |
12 | This is very good over rice. |
