Sequence Step
1Preheat the oven to 160oC. Grease one 125ml ramekins with butter and dust the inside of each one with superfine sugar.
2Put the cream and milk in a saucepan over low heat and bring almost to the boil. Add the chocolate and stir over low heat until the chocolate has melted and is well combined. Stir in the orange zest.
3Whisk the eggs and extra sugar for 5 minutes or until pale and thick. Whisk a little of hot chocolate cream into the eggs, then pour onto the remaining chocolate cream, whisking continuously.
4Pour the mixture into the ramekins. Place the ramekins in a roasting tin to come halfway up the sides of the ramekins. Cover with foil and bake for 30-35 minutes, or until the custards are set.
5Remove the ramekins from the water bath and set aside to cool completely. Turn the custards out onto serving plates. Top with raspberries and dust with icing sugar before serving.
