Halloween Pumpkin Cake
Ingredients

package (3.5 oz)chocolate pudding, dry mix, regular

Steps
Sequence Step
1Preheat oven to 350 degrees.
2Grease and flour two Bundt pans.
3In a large bowl, mix yellow cake mix, pumpkin, 1/3 cup vegetable oil, 3/4 cup water, cinnamon, nutmeg, and 4 eggs just until well blended (about 1 minute).
4Pour into one of the prepared pans.
5Clean bowl.
6In the large bowl, mix chocolate cake mix, 1/2 cup vegetable oil, 3/4 cup water, chocolate pudding mix, and mayonnaise.
7Add 4 eggs, one egg at a time. Mix after each egg.
8Mix batter on high speed for 2 minutes, then pour into second prepared pan.
9Place both bundt pans in oven and bake for about 50 minutes.
10Remove from oven and cool for 15 minutes.
11Remove cakes from pans and cool completely on wire racks.
12To Assemble:
13Cut flat side of both cakes to make an even bottom. Save the trimmings.
14Place the pumpkin cake, rounded side down, on a platter.
15Spoon filling evenly onto cake.
16Place chocolate cake on top, flat side to flat side.
17Fill center hole with reserved trimmings.
18Frost entire cake(s) using an up and down sweep to give a pumpkin like appearance.
19Decorate your pumpkin. Some suggestions: Use shoe string licorice for facial features and pumpkin lines. Use a snack cake roll as the stem. Use lime flavored fruit slice candies as leaves. Or you can use colored frostings.

1In a medium bowl, whip cream cheese.
2Add powder sugar and sour cream. Whip until smooth




Frosting
Ingredients

teaspoonsvanilla extract

tablespoonorange extract

teaspoonfood coloring, red etc.
Steps
Sequence Step
1In another bowl, add shortening.
2In a 1 cup measuring cup, add vanilla and orange extract. Add enough water to measure 1/2 cup of fluid.
3Add 1/2 of fluid mixture to shortening and blend well. Scrap sides of bowl and mix again.
4Add half of the powder sugar and blend well. Scrape sides and mix again.
5Add the remaining fluid mixture and blend well. Scrape sides and mix again.
6Add powder sugar, mixing well, until frosting will hold a peak.
7Add red and yellow food coloring to desired pumpkin color.
