| 1 | 1. Melt butter in large pot. | 2 | put chopped onion, celery and carrot in butter. Cover the pot and cook over low-medium heat for 5 minutes, stirring occasionally, till vegetables are soft. | 3 | add curry powder. Saute for 1 to 2 minutes. | 4 | add broth and cauliflower. Cook till cauliflower is very soft, 20-25 minutes. | 5 | puree the soup in small batches. | 6 | serve hot or cold. |
