large (2-1/4 per lb, approx 3-3/4" long, 3" dia)green pepper

poundground beef, 80% lean meat

cuprice basmati uncooked

tablespoonbalsamic vinegar

tablespoonsgarlic minced

cupTomato canned, puree

cups, shredded2% italian cheese blend
Steps
Sequence Step
1Halve peppers lengthwise and remove seeds.
2Brown beef and drain all but 1 tbsp fat. Add rice and garlic and saute 2 minutes. Add wine and deglaze, followed by water, tomato puree, spices. Turn heat to low. Cover and simmer 20 minutes or until rice is tender and most liquid is absorbed.
3Spoon mixture into pepper halves. Top with shredded cheese. Bake in oven for 20 minutes or until cheese is bubbly.
