Steps
Sequence Step
1In a small bowl combine the flours, baking powder
2In another medium bowl whisk the eggs, brown sugar, honey
3Make sure the eggs are mixed in really good.
4Add the melted butter and again stir to combine.
5Add the applesauce and stir that to combine.
6Gradually add the flour and fold in to combine.
7Then fold in the candied orange peel and the oats until everything is combined loosely.
8Spray and flour your muffin pan or line with muffin cups.
9I used my large muffin pan and that made about 9 muffins total.
10Add enough batter to bring it about 3/4 of the way to the top.
11Sprinkle more oats on the top
12Bake in a preheated 400 degree oven for 18-22 minutes, or until the tops spring back up when touched, or a toothpick inserted into the middle comes out (mostly) clean.
13Let the muffins sit in the pan for a couple of minutes, then let them cool completely on a wire rack.
14If you are feeling extra indulgent, mix some chocolate chips into the batter.
