| 1 | preheat oven to 350.
spray silicone mini muffin pan with pam (or some other kinda non-stick spray.(or you can use paper liners) | 2 | Dissolve water and instant coffee or espresso. set aside | 3 | In large bowl, combine coco powder, sugar, baking powder, apple sauce, vanilla, eggs, salt, and cinnamon. using a spatula mix till well blended. | 4 | toss in coffee, and flour. Mix till well incorporated. | 5 | I toasted my walnuts on med high heat in a dry frying pan till lightly browned. I removed them from heat and set aside while I folded in the chocolate chips. By the time I had done that, the walnuts were cooled enough to incorporate them into the brownie mixture. | 6 | take about 1 Tbsp of batter and place it in mini muffin pan
cook for 15 mins
I cooled them on a wire rack.
