package (10 oz)Spinach, frozen, chopped, thawed and well drained

medium (4-1/8" long)green onions

tablespoonsPeppers, sweet, red, raw, chopped

plum tomatoesTomatoes, seeded and chopped

teaspoonblack pepper, ground

cup, choppedOnion, chopped
Steps
Sequence Step
1chop onion, saute until translucent, add peppers and scallion, continute cooking for two minutes. Stir in chopped tomato and spinach, sprinkle with salt, pepper and garlic powder. Remove from Pan and set aside.
2beat two whole eggs, add egg whites and quarter cup milk beat together. Chop cheese into small pieces. Add cheese and vegetables to egg mixture, stir in stir breaking up any lumps of spinach. Add salt and pepper to taste, I also like to add a little garlic powder, I think it goes nicely with spinach.
3Preheat non-stick, oven proof pan on stove on medium heat. Spray with oil, pour in egg
