large (3" to 4-1/4" dia.)potatoes cubed

tablespoonsolive oil, extra virgin

tablespoonsunsalted butter, room temperature
Steps
Sequence Step
1Get large skillet hot with 1 to 2 tbsp of olive oil (cover pan bottom) and add butter.
2While skillet is heating wash veggies and potatoe. Cut all in half lengthwise. Cut each half into strips to be cubed (approx 1 inch cubes). Toss into heated skillet.
3Peel and cube onion (sweet vidalia is good) and toss into skillet with veggies.
4Add garlic and salt and pepper to taste.
5Toss over high heat until everything is coated with oil and butter then add about 1/4 cup water. Turn down heat and cover skillet with lid and simmer for about 20 minutes (or until potatoe is tender). Stir often and check to make sure you dont cook out all the water. Last few minutes; remove lid, turn heat back up to high to cook out the remaining water (brown some if you want).
