Steps
Sequence Step
1Sauté eggplant with mushrooms in olive oil until lightly browned. Add onion and garlic, sauté 2 minutes more. Toss in the rest of the vegetables and remove from heat. Pour vegetables into a casserole dish and bake 325°F for about 30 minutes. Top with grated parmesan and bake 5 minutes more.
