cupschicken broth - low sodium

cupbean sprouts

cupcilantro, fresh, chopped

tablespoonsolive oil, extra virgin

lime yieldsLime juice, fresh squeezed

Steps
Sequence Step
1Cut chicken into thin strips and put into a bowl. Squeeze one half of lime onto chicken and add salt and pepper. Mix the chicken until all is coated and put into the fridge.
2In pot, boil water. When water reaches boil take off heat and add the white rice noodles. Let it sit in water for 10 minutes, stir once or twice. Drain noodles into large strainer and run under cold water until noodles are cooled. Leave to the side to drain.
3Wash and cut bean sprouts in half, also wash and chop cilantro. In a pot, heat olive oil and add bean sprouts and cilantro. Cook for 3 to 4 minutes and then add broth. Squeeze the other half of the lime into the pot and bring to a boil.
4Once broth is at a boil, add chicken into the pot and stir for 5 minutes. Take pot off of heat and add the noodles. Stir and let it sit for 10 minutes and then serve.
