filletscod (1 lb) - 1.5 pounds cut into 1 inch cubes

medium (2-1/4" to 3-1/4" dia.)potato, diced

cupcup whole milk 2%

teaspoonsalt, to taste

teaspoonpepper, to taste
Steps
Sequence Step
1Place bacon strips in a large stockpot over medium-high heat.
2Cook bacon until crisp, then remove to paper towels to drain.
3Drain grease from the pot, reserving about 1 Tbls. Set heat to medium, and fry onions in the reserved bacon grease until tender, about 5 min.
4Add potatoes, and fill pot with just enough water to cover them. Bring to a boil, then cook until potatoes are almost tender, about 5 min.
5Add fish pieces, evaporated milk, whole milk, and butter. Bring to a boil, then simmer over low heat for 30 min.
6Season with salt and pepper to taste.
7Ladle into bowls and top with crumbled bacon pieces.
