tomatopint grape tomato

smallGreen onion, sliced

slices cookedbacon, chopped and cooked and drained of fat

cupsBaby Spinach leaves, loosely packed

cupsSpectrum Brand eggless vegan canola lite mayo

teaspoonlemon juice

dashpepper, to taste (may need more)
Steps
Sequence Step
1Cut the grape tomatoes in half, and place in a very large mixing bowl. Dice the onions and place in the bowl as well.
2Whisk together the mayo and mustard, adding pepper to taste and set aside.
3Crisp up the bacon in a hot nonstick pan. Remove from heat, drain well and chop into bit sized pieces. Add the bacon to the tomatoes and onion.
4Cook the pasta according to package directions, drain and let sit to cool off a bit (but not totally) for approx 3-4 minutes.
5Add the pasta and mayo mixture to the bowl and add the spinach as well.
