1PREPARATION INSTRUCTIONS: TRIM LETTUCE BEFORE WEIGHING. MUSTARD IS AN OPTIONAL INGREDIENT. PRECOOKED TURKEY MAY BE USED. SLICE THINLY BEFORE WEIGHING. 1. PREPARE TURKEY AS FOLLOWS: SLICE THINLY 16 TO 22 SLICES PER POUND. USE IN STEP 4.
2COMBINE MUSTARD AND SALAD DRESSING; BLEND WELL.
3USE 12-5/8THS POUNDS (100) CROISSANTS, SLICED IN HALF.
4SPREAD BOTTOM HALF OF EACH CROISSANT WITH 2 TBSP SALAD DRESSING MIXTURE. PLACE 3 OZ (3-4 SLICES) TURKY ON CROISSANTS, TOP WITH LETTUCE AND OTHER HALF OF CROISSANT.
5SERVE IMMEDIATELY. IF NOT SERVING COLD IMMEDIATELY, ASSEMBLE SANDWICHES AND WRAP THEM (IND. OR IN BULK) AND HOLD AT 33-40 F UNTIL SERVING.
