Steps
Sequence Step
1COMBINE BEEF WITH BREAD CRUMBS, SALT, PEPPER AND GARLIC; MIX UNTIL BLENDED.
2RECONSTITUTE MILK- if using DRY
3ADD MILK, CELERY, ONIONS, SWEET PEPPERS, EGGS, AND TOMATO JUICE. MIX THOROUGHLY.
4PLACE ENOUGH MEAT MIXTURE INTO 2 INCH 1/3 PAN TO FIRMLY FORM LOAVES.
5USING A CONVECTION OVEN, BAKE 1 HOUR 15 MINUTES AT 350F. CCP: INTERNAL TEMPERATURE MUST REACH 155F OR HIGHER FOR 15 SECONDS. SKIM OFF EXCESS FAT AND LIQUID CURING COOKING.
6LET STAND 20 MINUTES BEFORE SLICING. CUT 6OZ SLICES. CCP: HOLD FOR SERVICE AT 140 F OR HIGHER.
