| 1 | Chop onions. | 2 | Pound chicken breasts flat. | 3 | Grate cheese - or slice into rough julienne strips. | 4 | Slice open whole green chiles so can be stuffed. Put in cheese and some chopped onions (onions to taste). | 5 | Spray rectangular glass baking pan with oil mist. Place spinach in bottom of pan. | 6 | Place stuffed chiles on flattened chicken breats and roll up. Place on spinach. | 7 | Mix remaining onions (to taste) and chopped cilantro in green chile enchilada sauce and spoon over chicken and spinach. | 8 | Cook at 375 degrees F for 20-30 minutes. |
