Steps
Sequence Step
1Cube bread. Combine cubed bread, garlic, and water. Let stand 10 minutes until water is absorbed.
2Add ground beef, onions, eggs, salt, and pepper; mix well. Shape into 200, 2-1/2 ounce patties. Flatten patties to 3-1/2 inch diameter.
3Cut cheese slices in half. Place halved cheese slices on 100 patties. Place another halved cheese slice on top of ham. (Ham slices should be .5 ounce each) Fold ham around cheese. Fold ham and cheese no larger than 3 by 3 inches to fit inside patties and ensure a good seal. Add remaining ham slices. Place remaining patties on top; enclose securely by sealing edges together.
4Using a convection oven, bake in 350 F. for 15 minutes or until done on high fan, closed vent. CCP: Internal temperature must reach 155 F. or higher for 15 seconds. CCP: Hold for service at 140 F. or higher.
