Steps
Sequence Step
1Preheat oven to 375. Mix raw bran and boiling water in a large bowl and set aside.
2Combine egg whites, sugar, buttermilk, yogurt and dried fruit (if used) in a mediaum bowl. Add to bran in the large bowl.
3In a medium bowl, mix the flours, baking soda and cinnamon. Add to bran mixture and mix until just blended. Spoon into lightly oiled or paper-lined muffin tins. Bake for 25 minutes.
