peppersPoblano pepper, roasted and chopped with juice
poundbeef stew meat, cut into 1 inch cubes

Sequence Step
1Blister Poblano peppers. Place in a bowl and cover for 20 minutes. Peel off skins and discard with seeds and stem. Coarsely chop the peppers. Brown beef in a dutch oven in olive oil. Remove and keep warm. In the reserve drippings saute onions until tender. Add garlic and cook 1 minute longer. Add the remaining ingredients except for the potatoes and bring to a boil. Cover and simmer 1 1/2 hours. Add potatoes and cook until tender. About 30 minutes. Skim fat
