| 1 | Mix onions, garlic, jalapeno or fresno pepper and sundried tomatoes in large skillet with olive oil at med-lo heat for 2-3 minutes, or until onions are soft. Mix in black beans, zucchini, corn and seasonings. | 2 | In large bowl, mix together by hand ground turkey, egg whites, breadcrumbs and vegetable mixture. | 3 | In blender, combine tomato sauce, 1/4 cup black beans and 1/4 cup salsa until smooth. | 4 | Mold meatloaf into medium loaf pan.
