Steps
Sequence Step
1Mix onions, garlic, jalapeno or fresno pepper and sundried tomatoes in large skillet with olive oil at med-lo heat for 2-3 minutes, or until onions are soft. Mix in black beans, zucchini, corn and seasonings.
2In large bowl, mix together by hand ground turkey, egg whites, breadcrumbs and vegetable mixture.
3In blender, combine tomato sauce, 1/4 cup black beans and 1/4 cup salsa until smooth.
4Mold meatloaf into medium loaf pan. Pour black bean salsa mixture over top and smooth until surface is completely covered. Bake at 350 degrees for 45-60 minutes, or until 165 degrees.
