Steps
Sequence Step
1Chop and combine celery, onions, carrots and jalapenos. Saute in 1 tablespoon olive oil and 1/4 cup of vegetable broth for 2-3 minutes.
2Add broth, water, and all seasonings to a large stock pot and bring to a boil. Season broth to taste.
3Add sauteed vegetables (cooked to your preference of "crunchy") to the stock broth and add all other vegetables. Boil for 5-10 minutes - again to your preference of "crunchy".
4Serve with barley, ground turkey, or ground beef
5Add one tablespoon of non-fat, unsweetened plain yogurt (or sour cream) for an amazing creamy taste!
