1Adjust rack one-third up from the bottom of the oven and preheat to 350 degrees. Butter a 9-by-5-inch loaf pan and dust with dry bread crumbs.
2Sift together flour, salt, baking powder, and baking soda in a bowl.
3In a separate large bowl of an electric mixer, beat the butter until soft.
4Add vanilla, then the sugar, and beat until well mixed. Add egg and beat until pale in color. Add bran cereal and beat just to mix.
5Coarsely mash bananas. Add water to bananas and stir into bran mixture. Add the raisins and walnuts and beat only to mix.
6Then, on low speed, add sifted dry ingredients, scraping the bowl with a rubber spatula. Do not overbeat.
7Optional: Mix in white chocolate chips.
8Turn mixture into prepared pan and smooth the top. Bake for one hour or until a toothpick inserted in the middle comes out clean.
9Cool in pan for 10 to 15 minutes before removing from pan. Cool; refrigerate one or two hours before slicing.
