GRILL UNTIL THOROUGHLY COOKED AND BROWNED. TURN FREQUENTLY TO ENSURE EVEN BROWNING. 3. PLACE HOT DOGS IN BUNS. IF DINER WANTS NO BUNS, DON''T GIVE THEM ANY. IF THE DINER WANTS THE HOT DOGS SERVED SEPARATELY FROM THE BUNS, SERVE THE DOGS ON THE SIDE. CCP: INTERNAL TEMPERATURE MUST REACH 145 F. OR HIGHER FOR 15 SECONDS. HOLD FOR SERVICE AT 140 F. OR HIGHER. NOTE: SERVE FROM SHORT ORDER OR COMBINED LINE STEAM TABLE. DO NOT SERVE FROM PAN WITH MORE THAN 1/2 INCH OF WATER IN IT. THE STEAM TABLE SHOULD BE ABLE TO KEEP THE PRODUCT AT TEMP.
