| 1 | Pre-heat oven to 325 degrees. Grease a 12-cup muffin pan with cooking spray. | 2 | Mix eggs, milk, and pepper. | 3 | Blanch spinach in hot water until leaves are soft (2-3 minutes) | 4 | Divide ham slices into thirds and place into muffin cups.
