1PAN: 12 BY 20 BY 2.5 INCH STEAM TABLE PAN ****OPTION: FOR A CHOCOLATE CREAM PUDDING PARFAIT, LAYER WITH WHIPPED TOPPING IN INDIVIDUAL CLEAR DESSERT CUPS (OR LINE PAN, IF DESSERT CUPS N/A). TOP LAYER SHOULD BE CHOCOLATE, GARNISHED W/WHIPPED CREAM DOLLOPS. CLEAR DESSERT CUPS SHOULD BE PLACED IN REFRIGERATED CABINET. LINE PAN SHOULD BE PLACED ON COLD BAR. 1. COMBINE MILK AND DESSERT POWDER. USING WIRE WHIP, BLEND AT LOW SPEED 15 SECONDS OR UNTIL WELL BLENDED. SCRAPE DOWN SIDES OF BOWL; WHIP AT MEDIUM SPEED 2 MINUTES OR UNTIL SMOOTH. 4. POUR ABOUT 4.5 QUART PUDDING INTO EACH PAN. COVER SURFACE OF PUDDING WITH WAX PAPER. 5. REFRIGERATE AT LEAST 1 HOUR OR UNTIL READY TO SERVE. NOTE: PUDDING MAY BE GARNISHED WITH WELL DRAINED FRUIT OR WHIPPED TOPPING.
