cup (8 fl oz)boiling water

cup, chopped or slicedTomatoes, seeded and chopped

cup, pared, choppedCucumber, peeled & seeded, chopped

fruit (2-1/8" dia)1 lemons juiced

cupolive oil, extra virgin

Steps
Sequence Step
1Combine boiling water and bulgur in heatproof bowl, stir, cover and set aside for 1 hour.
2Zest lemon into bowl with bulgur, then squeeze in lemon juice.
3Add olive oil, salt and pepper to taste.
4Stir in chopped veggies and feta, and chill for at least 1 hour.
