| 1 | Heat pot and saute olive oil, chicken cubes, onions, ginger and thyme for 2 - 3 minutes. Add chicken stock, carrots, celery, pearl barley and simmer for 30 - 60 minutes. Add parsley if desired and heat through for an additional 10 minutes. Add water as neccessary as you go. Very good on the second day too. |
