| 1 | Combine wet ingredients in a bowl. | 2 | Combine dry ingredients in a separate bowl. Make a well in the centre of the dry mix and add the liquid. | 3 | Stir until just incorporated (over mixing will result in flat muffins!). | 4 | Fold in the fruit, spoon into muffin cases or silicone muffin pan. | 5 | Bake for 20-25 minutes at 180C or until lightly browned and a skewer inserted comes out clean. |
