pounds, rawApprox. 2 cups chicken breast, cut into 1/2 inch pieces

cupsbrown rice (cooked)

peppersPoblano pepper, roasted, seeded and chopped
1/2
medium (2-1/2" dia)White Onion, chopped
2
stalks small (5" long)celery, chopped
2
teaspoonsolive oil
4
ouncesPepper Jack Cheese shredded
4
ouncesshredded Reduced Fat cheddar cheese

ounces2% monteray jack and cheddar cheese
1/2
cupPanko bread crumbs
1/2
teaspooncanola oil
Steps
Sequence Step
1Season and bake chicken, then chop to desired size
2Chop onion and celery, saute in 2 tsp oil until tender
4Place mixture in a 14 X 9 in dish coated with cooking spray.
5Sprinkle the 2% monterey jack
6Spray lightly with cooking spray and cook in a 375 degree oven for 15 - 20 minutes or until thoroughly heated and the topping is browned.
