ouncesshrimp, shelled and deveined
medium (2-1/2" dia)Red onion, diced small
large (5" long)Red Pepper, banana, raw (sub. for Anaheim)

medium whole (2-3/5" dia)tomatoes, ripe, peeled and finely chopped
teaspoonsesame oil

Sequence Step
1Shell, remove tail and de-vein 1 lb small to medium shrimp. Set aside.
2Finely chop about 1/2 red onion. Flatter onions have a sweeter taste than ball shaped onions.
3De-seed large red banana pepper. Dice about 3/4 of pepper. The rest can be used in salad. Add to onion.
4Add 2 tbs minced garlic and 1 tsp sesame oil to onion and peppers. set aside.
5wash and destem 2 large portabella mushrooms. chop into 1/2 to 1 inch pieces. set aside.
6wash 1 medium zucchini. Leave peel on. Cut off about 1/3 of zucchini and chop into 1/2 to 1 inch pieces.
7wash and dice 2 medium size vine ripened tomatos. add to zucchini and set aside.
8pre-heat skillet with olive oil over med high heat.
9add garlic, onion and pepper saute stirring often until garlic is browned. reduce heat to medium.
10add mushrooms, cover and simmer on medium heat for about 5 minutes, stirring occassionally.
11add tomato and zucchini. cover and simmer until zucchini is softened. stirring every couple minutes.
12add shrimp. continue to simmer covered and stirring occasionally until shrimp is cooked through. About 5-7 minutes. Season with ground sea salt, ground pepper. optional add about 1 tsp of cajun crab boil seasoning.
13Serve over brown rice, pasta, or alone.
