| 1 | Rub chicken with salt, pepper, cumin and garlic. Brown in skillet on medium, 10-15 minutes. | 2 | If using rice mix which calls for browning in butter before adding water, complete that step and then put in a greased casserole dish (it will be runny, but the completion of the cooking will take place in the oven instead of on the stove). Mix in black beans and tomatoes. | 3 | Place chicken on top of rice in the casserole dish, then cover with salsa and cheese (optional). Bake 15 - 20 minutes or until rice is fully cooked. |
