| 1 | Cut tofu into 1 inch cubes.* In a large skillet, heat olive oil over medium heat. Add Onions, garlic, seasoning, pepper, and tofu. Stir-fry for one minute. Add tomatoes and spinach and stir-fry for two more minutes. Serve hot, great over couscous.
*TIP: Freeze tofu overnight and thaw before cooking. This helps the tofu stay together during high heat cooking and keep a good texture. |
